We always stay at Residence Monge on rue Monge. It is near two metro stops and about a 15 min walk to the Seine. If you get a room at the back, the view is of the Arene de Lutece - very pretty and quiet! The rooms are about average in size for a Parisian hotel.
I can't find their website off hand but if you are interested, I can get the info as we are headed back there next week.
We have also stayed in the Hotel Saint Christophe:

Both of these hotels are located next to the Jardin des Plantes in the 5th.

1/ You say the choice of hotels is baffling : it is true for 3 main reasons : - the hotels use to put in their name a world famous attraction to catch the customers but often they are far from it. - some arrondissements (districts) are known to be centrally located but they are large on a "walking basis". For example, a hotel in the 5e arrondissement can be closer to the 13e arrt boundary than the Quartier Latin and you can be deceive to have to walk a long to reach the River Seine bank. - some websites contain false information. For example : "15 min from Chatelet." That means the duration of the ride by RER (express metro) is 15 min but you can be lodged in the suburbs and the ride between your hotel and the place du Chatelet needs 1 hour. More, the metro linked with the subursbs is often unsafe by night.
I add a common false idea : the hotel prices are directly linked with the location and the central hotels are expensive. It is partly wrong. The prices are made according to the category and I know a lot of budget hotels centrally located.
2/ Your question : I suggest : - in St Germain des Pres, between Jardin du Luxembourg and Odeon : Grand hotel des Balcons http://www.paris-hotel-grandbalcons.com/English/Reservation.htm It matches your request. The area is quiet and safe. The metro Odeon is close.
- if you want a cheaper accomodation : Hotel St Andre des Arts 66 rue St Andre des Arts (6e arrt), near the Carrefour de Bucy (metro : St Germain des Pres) 331.43.26.96.16 - Fax : 331.43.29.73.34. Price : 70/80 euros
If your goal is to be fully centrally located, I suggest the hotels of rue Victoria (4e arrt) : - Hotel Britannique (3***) : 180 euros - Hotel Victoria Chatelet : 90/100 euros. You cannot stay in a more central place in Paris (1 min walk from the place du Chatelet).

I've seen Hotel Bonaparte mentioned on another travel forum. It's right on rue Bonaparte closeby Pierre Herme's patissierie so that's a bonus! Right in the heart of St. Germain it is. I read they do have triple rooms. BUT there is no website nor email access-the owner does not want either.
It's a 3* but not luxurious, what they do call "well-worn" in areas. But lots of people love it for the location and the reasonable rates.

Guess I am little late to book some of the hotels - some of the hotels recommended above are already fully booked for the dates I want - Oct 5 (check out) to 10 (check out).
By the way, does anyone know anything about this hotel? Any feedback? I have already seen the comments on Trip Advisor.

Hi,
I do know a little about Hotel Therese but it's not from personal experience however-it's from reading about the hotel. You can see the comments on www.tripadvisor.com and it's featured in Sandra Gustafson's book, Great Sleeps Paris, 10th edition. It's what you may consider a boutique hotel.
My favorite hotel, Le Verneuil, is the sister hotel of The Therese coincidentally. From what I understand the decor is understated but not stark. The owner, Mme. de Lattre, is very specific in what she wants her hotels to represent. The Verneuil, for example, was decorated personally by Mme. de Lattre and her decorator, Michele Halard. So I would definitely expect Hotel Therese to be of the same high standards as the Verneuil.
Location also is great as the Therese is in the 1st arrondissement which is closeby the Louvre and major department stores. Plus it's an easy walk to the Seine.

Thanks for replies. I just got back from Hong Kong...did not have internet access earlier. Hotel Therese and its affiliate hotel Hotel Verneile are also fully booked! Will definitely check out the apartment option.
