I only ever went to Jersey, but the beaches there are very nice, especially on the West shore. As for wildlife, there's lots of grassland, but the only time i saw anything other than cows was at the Jersy zoo. Definitely worth visiting though!

Nature: Both Guernsey and Jersey are not really breathtaking as far as their nature is concerned, but there are several impressive cliffs (Jersey northcoast, Guernsey southcoast). If you like to walk a lot, then the south-coast of Guernsey offers an interesting path along the beaches and cliffs, starting from St. Peter Port going southwards and then along the south-coast to Pleinmont. This is probably the best experience in nature you can get.
Beaches: There are several beaches in Guernsey, the best ones at the west-coast, but the best beach in the Channel Islands is on Herm Island (20 minutes by boat from Guernsey).
