In Puerto Montt you have to see Angelmo. It´s a street by the sea with artisans and many places to eat seafood. Food is good, but not the best in the region.
If you have only a day, I'd suggest spending 1 hour there, then head to Puerto Varas and Frutillar to see the Llanquihue Lake and the Osorno vulcan, and have lunch there (either seafood or german or italian food). Then you can go to the Saltos del Petrohué and even reach the Hotel Petrohué, by the Emerald lake. That's enough for a day. The oysters (and everything else) at the Casino de Puerto Varas were excellent.
