It's highway - a little hilly out of Monterey --- HOWEVER ---
follow the speed limit when you see King City in the signs going down. There is some sort of CHP (highway patrol) center there, and they love to catch people in the vicinity of King City.

I think that's the Highway 101 route which is a bit hilly.

If you take HWY 1, it's very curvy and STUNNINGLY beautiful. You take HWY 1 to HWy 46 and then head up towards Templeton/Paso Robles.

Extremely beautiful!

There are two ways to get to Paso Robles from Monterey: CA 1, the long but beautiful coast highway, and US 101, the slightly scenic freeway. If she has a real serious problem with car sickness, then CA 1 is probably out. It's not very mountainess, but it is very curvy.
US 101 isn't great for car sickness either, but it's better. There aren't as many sharp curves and it's also quite a bit faster.

Have your wife drive and take the main highway and not the one along the coast.

California has a lot of hills and curves on most of it's highways and byways. That is what makes traveling by car so stimulating. Keeping your eyes on the road for the curves and dips while trying to get a glimpse of the beauty of the passing scenery is a challenge to all. The most beautiful way to Paso Robles from Monterey is, as mentioned, Hwy 1. If your wife can take a motion sickness pill, the best, per my wife, is "Bonine". See Website: http://www.bonine.com/

If that works then the drive on Hwy 1 is the way to go. It would be a shame to not be able to see all that there is to see on one of the most beautiful drives anywhere, Hwy 1. Ocean, mountains, red wood trees, beaches and quaint towns along the way passing by Carmel-by-the-Sea, Big Sur, State Parks, McWay Falls, Ragged Point, Piedras Blancas Lighthouse, Elephant Seal Rookery, Hearst Castle(San Simeon)and Moonstone Beach(Cambria) before turnoff for Hwy 46, that takes you into Paso Robles.

I agree the best way (but longest) is the Hwy 1 down the coast. Probably not good for somebody who gets car sick. However, it can be driven slow and stop often (you would anyway). If you plan to do it in one day leave early. It is a pretty long drive as you have to go south of Cambria then go east back to Hwy 101 and double back north to Paso Robles. If there isn't a specific reason you need to be in PR then I wouldn't.

The other way down Hwy 101 is a four lane highway most of the way, flat, straight, and boring.

You don't need to go all the way to Hwy 101 in San Luis Obispo, if you decide to take Hwy 1 to Hwy 46 to get to Paso Robles as I mentioned. You would be adding 33 miles to the drive if you went to San Luis Obispo before going to Paso Robles. Hwy 46 Turnoff is about 3 1/2 miles past the town of Cambria. To go via Hwy 1 vs. Hwy 101 to Paso Robles is only about 13 miles further, but, yes, it takes about an hour longer and what an hour. That extra hour of driving will give you memories to last a lifetime. It doesn't get much better than this.
