Having visisted Nice before and seen the Cannes, Monaco sights, etc, we fancy flying to Nice then travelling to a small picturesque village that is accessible by local transport. I have stayed in Haut de Cagnes which was beautiful so any other ideas? We are an active middle aged couple who enjoy walking etc coupled with Nice relaxing restaurants

check my VY pages - we just got back - rented a house in Eze - just love the area - I would go back - also consider Antibes or Beauliue sur Mer
the trains work great along the coast
there are plenty of nice mountain villages, but don't know how you would manage the transprotation(we rented a car)
St Paul vence is the best little mountain village - maybe 30 minutes north of Nice

The world is your oyster. This area of France is my favourite especially in Spring time. There are so many beautiful places. Stick a pin in a local map and I bet you will find something lovely.
For planning using buses its great to have a detailed route map that you can zoom around on:

I am sure there are others.
And don't overlook the quaint train line that runs from Nice up into this foothills and finishes eventually at Dignes taking in all kinds of places to explore:

How about stopping off at the awesome medieval village of Entrevaux ?

Can you let us know how small you want the place to be? Antibes & Beaulieu are nice but are not small villages, more like big towns. There are fanstastic small and tiny villages in the Vallee de la Roya: Breil, Saorge, Tende or in the Vallee de la Vesubie. These are a bit further afar but are worth a go. I think there is a train or bus from Nice to Tende but I have no details (I went by car). There is a nice small treck from Saorge to a isolated Chapel.

Second vote for Entrevaux, which translates to "Entrance" as it was the border between France and Italy maybe 400 years ago. Its a time warp and is amazing. Check out my Entrevaux page for more details.
The narrow gauge train that leaves from Nice is a quirky little train with some great scenery on the way. Suggest you check out previous posters link and get to the station early and grab a seat close to the driver. (the train is more like a bus)

Nice is a good base for public transport in the area. You can go either way towards Italy for Menton or west into France to Toulon, or up the hills to St Paul and Vence, Grasse,Castellane etc. Cagnes sur Mer is nice too.
for relaxing restaurants in Nice, try the area of the vielle ville. My favorites there are
le bistro du port, 28 quai Lunel tel +33 (0) 4 93 55 21 70
la taca d'oli, 35 rue paroiliére, tel +33 (0) 4 93 80 70 93
very popular with the locals.
