Not sure if you can buy a Metrocard at the airport but you won't need one there anyway. The Airtrain is free and will take you to NJ Transit. NJ Transit, which will take you into NYC, also does not accept the Metrocard. You can get a card once you arrive in the city, most likely in Penn Station.

At the Metro station you can purchase a card from the machines for less than at the window.

The MetroCard is for NYC buses and subways and the PATH.
You can buy them once you are in NYC.

The monorail at Newark Airport is free, but unless you purchase a ticket,
you won't be able to get into the Newark Airport Station itself to take
the NJ Transit train into NYC. Both Amtrak and NJ Transit trains stop
at the Newark Airport Station and you can buy tickets for either to take you into NYC, but the price of Amtrak is 2x that of NJ Transit, so be alert.
