If you were to go to a Boston Red Socks game while visiting Boston, what transit would take? I have seen posts which stated after dark the area could be unsafe. I will be staying on the bay.

There is only 1 train station that serves Fenway. That's called Fenway, and it's a shunt of the Green T. The entire subway system is referred as The T. I was there in April. Fenway is in an industrial area, right off the Interstate, so that after the post=game bar scene closes down, the area is deserted. When you say you are staying on the bay, do you mean the Back Bay? That is much closer to Fenway.

Actually, the closest subway station to Fenway Park is Kenmore, although I know this doesn't make much common sense. And while Interstate 90 passes underneath the area, there is no access to the highway or ramps, for that matter. Right after the game, the area is quite crowded and you won't have any difficulty. Even late at night, there are many nightclubs in the area, so you have to use your normal street-sense. And I'm not quite clear where you are staying either, so that would be helpful knowing.

I am staying at Doubletree on Mt Vernon St, I believe the area is called Bayside.

The hotel you're in is way over by the Expo Center, not really near the downtown. If want to take the T to Fenway, you'll probably have to take the red line to Park Street and then switch to the Green line (anything but the E train) to Kenmore Square. The area around Fenway is very safe these days, more like a mall than a respectable city, so I wouldn't worry about that. I might worry about being out around your hotel at night though. I don't think that's the best area after dark.
