A few ideas that haven't been mentioned:
BeaverTails: These are classic Canadian snacks, essentially sweet fried pastry in the shape of a beaver tail. I think they originated in Quebec, but you can find them at most gift shops. Check out www.beavertailsinc.com
Ice Wine: Canada is the world's leading producer of ice wine. It's a sweet dessert wine made from grapes harvested in winter, when temperatures are below freezing. The good thing if you're traveling is that ice wine comes in small 375ml bottles. You can find ice wine in liquor stores and in some of the gift shops.
Souvenirs from Granville Island Brewing: Located in the Granville Island neighborhood, this was Vancouver's first microbrewery. They offer tours and also have a great shop with the obvious (beer), plus lots of cool bottle openers, t-shirts and other things.
