My advice is to jump in a taxi to Dubai Mall. Also taxi back to the airport from the souk area, it's only seven or eight kilometres.
Sunset is currently around 7pm. The last few evenings have been very pleasant to wander around, although humidity is getting higher. Last evening we had dinner at The Walk and the outdoor tables in almost all the scores of restaurants were full, in preference to the indoor air-conditioned ones.
Five would be an OK time to start goingt o the Creek area. Shops are open until around 10 in the evening.
At Dubai Mall, have a walk across the bridge to the Old Town Island area, it's well worth seeing. The world's tallest building is also there, plus the beautiful hotel The Address, both of which you should check out.
The huge window of the aquarium is in the mall and is free. You can also pay (I think it's AED20) to go into the big plastic tunnel which means you are surrounded by the fish. Don't bother to pay for the full tour into the rest of the aquarium though.
