1. Nope, sorry, check out tripadvisor.com
2. Lots of temples, churches and even a mosque. Interesting architecture, like Hotel de Ville, post office interior. Museums, like War Remnants Museum. Eating, particularly at Quan An Ngon. Shopping at markets like Ben Thanh and Binh Tay. Day trips to Mekong Delta, Great Temple of Cao Dai, Cu Chi Tunnels etc. Depends really on what your interests are.
3. Use Vietnamese Dong.
4. Quan An Ngon
Enjoy!

I can't answer the hotel question, but if the hotel is no good just go for a walk around the Pham Ngu lao area and you can find another easily.
If you like bars, Apcolalypse Now is big and famous, Q Bar is a bit more sophisticated, or you can just hang around the bars in Pham Ngu Lao.
For day time activities, a trip to the Cu Chi Tunnels is always good (has firing range), and there are a hand full of alright museums around the place, the website below willgive you some ideas,
http://www.saigonscene.com/Museums.htm
I find Vietnam Dong easier and more conveneint.
USD is ok if you have small denominations, if the USD denominations get big sometimes they might not be able to get enough change for you.

Don't exchange more than you need as you will loose when you are ready to leave Nam and exchange the money back to $. Never carry more on you then is reasonable per day as it's common to have your pocket emptyed by the locals and believe me, they are very skilled at this. I have a wallet with a chain to give me several seconds to react to a unwanted hand in my pocket. The same goes with jewelery, cell phones, cam's. Avoide allowing anyone, even children to touch you and in a crowed area, be double careful. As for places to visit, that all depends what type of intrests you have but the hotel can advise you.
