By train to Florence:
http://www.ferroviedellostato.it/homepage_en.html
will give you time and fares in English.
There is no need to book your tickets in advance. Tickets machine sat the stations you are likely to use have English language options.
But you may not have realised that Florence is some considerable distance from Civitavecchia, which is really the port for Rome. You almost certainly have to change trains, mostly at Rome Termini.
Not sure this is a feasible trip for a cruise-stop, to be honest. Fastest train takes 2h47m, one-way fare 48.40 euro. Might be better to explore Rome instead.
You could alwys hire a private driver, but it won't be a cheap option. Google for companies.
Naples>Sorrento is much easier. Take the bus or taxi from the post to the Circumvesuviana tran station at Napoli Garibaldi. Circumvesuviana trains are more like Metro carriages than long-distance trains, are very cheap and very frequent (and perfectly safe, although you should watch for pickpockets in all tourist-popular places everywhere). You do not need to buy tickets in advance. Journey time to Sorrento is around one hour. Timetables here (the Circumvesuviana is not part of Trenitalia, so does not appear on the first link I gave):

You need Linea Napoli>Sorrento. Sorrento is the end of the line, so no fear of missing your stop!
The train also stops at Pomeii-Scavi-Villa dei Mysteri, right opposite the entrance to Pompeii. Unmissable, imo, if you have not already visited, but allow at least 2-3 hours to explore.

Go to trenitalia.it (then choose your language), and you can purchase a little ahead of time if you like. This train station in Civitavecchia is really close to the port. There are usually automated ticket vending machines in the station/on the platform, and you can also choose your language there. It'll take about three hours to Florence (Spelled Firenze in Italian) including the transfer in Rome. The Rome station is called Termini and the Florence Station is called Santa Maria Novella, so be aware of their abbreviations, like S.M.N. or Term.
Not many people know this, but depending on the location of your hotel, you can also exit a local train at Campo di Marte (the first stop in Florence coming from the Rome direction), which helps if your hotel is east of the Duomo, nearer to the Santissima Annunziata area. Exiting at Campo di Marte will save you a lot of hassle that is the chaos at SMN station, but obviously if your hotel is right near SMN, just get off there. DO NOT exit at Rifredi station; this is the industrial area outside Florence.
For Napoli/Sorrento, walk northeast from the Napoli port to the train station and take it to Sorrento, which is pretty small.

I would advise against walking to the Circumvesuviana station. Although not actually too far in distance terms (maybe 20-25 minutes?) you are likely to spend extra time map-reading and navigating. Walk back from the station if you like (and have time)
I would not describe Santa Maria Novella railway station in Florence as 'chaotic'. It is busy, like all main stations, but not in any way problematical. You should get off at SM Novella for a short visit.....the Duomo is only around 10 minutes walk away, more or less straight ahead as you exit the station..
