Cruise ships don't dock at Edinburgh - they moor offshore and you get 'tendered' in. In other words you get into the small boat that will bring you to Hawes Pier, at South Queensbury.
Then you have options for getting to Edinburgh. Taxi, train or bus.
The train is a walk up a hill to Dalmeny Station.
The Bus a flat walk along the front, but not so easy to find the stops.

Would suggest you open GOOGLE MAPS and put in this address for where you land:
South Queensferry, Hawes Pier
You can see the satellite view of the pier and bus stops as well as the railway station which is about 20 minutes walk away - uphill.
www.nationalrail.co.uk will give you times, details and fares for trains - they take about 20 minutes into Edinburgh.
