I've used both methods. Both take about the same time, but you may have to change trains at Pisa Centrale. The airport train takes about 5 very slow minutes to get to P Centrale, and you may have to change platforms.
The Terravision bus goes from the airport car park and drops you off outside Santa Maria Novella station in Florence. Best to book your tickets online for this: coaches get full-up whilst trains do not.

Buses can get stuck in traffic congestion, so your arrival and departures times are relevant from this point of view.
Having used both, on balance I'd say train is the safest option in terms of time-keeping. So I'd choose bus from and train to the airport (and did).
