Have a look at discovertasmania.com. It is a great starting point for planning your time.
Are you flying there, or going by ferry from Melbourne?

A trip to Cradle Mountain if you like the rugged outdoors.Hire a car and travel around. Tasmania is a small Island but you will be amazed how many fantastic sights there are.If you stay up North then you could do the East Coast, lots of great beaches and national parks.Look out for fairy penguins--koalas--wallabies etc.Lots of wildlife.
Christmas day is usually a quite day and most people do their own thing--Launceston have some lovely park areas to go for a picnic--Check out WWW. Tasmania.com

Arrive by ferry in Devonport, hire a car and spend the first day at Cradle Mt.
Stay the night in Launceston.
Drive to St Helens or Swansea, stay the night -- there are many beautiful parks, beaches, waterfalls etc. along the east coast.
Drive to Pt Arthur and spend the day exploring (I think the guided tours do not operate Christmas day)
Drive to Hobart, again there are beautiful places to explore around Hobart.
I'm assuming you are flying out of Hobart?

If you have to get down to Hobart to fly out, then definitely plan to go to Port Arthur somehow. It is the most fascinating historical site, and also good for kids. Tasmania is simply stunning. You will enjoy it wherever you choose to go.

Our trip is not finalized, but out plan is to fly from devonport, however, we were wanting to go down the middle of the island to hobart and port arthur and up on the east coast. We have finlize our dates to add a day - from the morning of Dec 22 and out the 26 - gives us 4 days.
