In the UK pre-booked mini-cabs are always a bit cheaper than taxis which you take from a rank without booking.
I suspect that any local taxi firm you contact will charge much the same as the airport taxis, if not more (some may be from the same firms anyway). UK taxi and mini-cab local rates are set by local councils, not individual firms. All firms have to be licensed and regulated.
Stansted is not really a place .....it is really just an airport, near the village of Stansted Mountfichet (where many airport taxi firms are based).

Days Inn is not in Bishops Stortford itself, by the way, although its address suggests it is. It is in the motorway services area between the airport and BS. A taxi will take 10 minutes or less.
It might be worth emailing firms which offer larger vehicles for a quote, because obviously one taxi will be cheaper than two.
