my girlfriend wants to see these castles but due to time we will only get to one of them. Which one would you recommend seeing and why?

I would go to Duart Castle. The Isle of Mull is beautiful. Less tourists. However, remember that you have to get there, so that will take time. I assume, as you have posted this in the Edinburgh Forum, that you will be starting off from Edinburgh.
