Aside from Meggy's suggestion of Luna Park which is an old school amusement park, theres is heap of stuff around St Kilda that is really good for kids. My daughter has found a 'cool' playground called St Kilda Adventure Park, nestled amongst houses and apartment blocks, typcial Aussie suburbia. It has a flying fox, trampoline, live chickens wandering around, swings, slides, climbing things, a half pipe and most other things that are not in most childrens playgrounds today. There is even barbecue facilities (so you can bring some snags or burgers to cook) and tea and coffee for the adults (free but you can give a coin donation if you are the giving type). Its located off Neptune street which is off Grey Street in St Kilda. Best thing is, its free and the children will be occupied for hours :).
My children also like the Zoo or Healesville Sanctuary, furry animals is always a hit but it depends what they are 'into'. Have a look at my Melbourne page which is a work in proress but getting there.
