Hi, I am looking to spend 8 weeks in these three countries and am looking for advise on things to do & places to see. I am looking for off the beaten path experiences, adventure & opportunities to work with communities. Any advise would be much appreciated.

Helping Hands Cambodia is something you can investigate. Its a school for children in a village about an hour out of Siem Reap. I visited recently and helped out a little but you will need to contact them and ask if they need any help or donations. Web site: www.helpinghandscambodia.com
