You will be perfectly safe on the Circumvesuviana train to Sorrento, imo.
It is a commuter train, so more like a subway carriage than a longer-distance train carriage. Seats are not padded, for example, and there are no toilets (as far as I am aware).
Services are frequent and reasonably-priced. Timetables here:

Sorrento is the last stop, and the journey takes around an hour.
To get to the Circumvesuviana station you simply follow the signs at Napoli Centrale station and go down one level.
You will be perfectly ok.

There are no safety issues with regard to the Circumvesuviana train - have used it on quite a few occasions and at all times of the day and into the evening, with no probs at all. Can't compare Naples train station to that of Florence but imo it is better than the one in Rome and on a par with the ones in Bologna and Venice - seems to me to be the usual run of the mill station.... functional and efficient but no great architecture. You don't indicate where you are from so I've no idea what you are used to in terms of stations.

That all is helpful, I thought the Florence trian station was a bit run down and we had an issue with a pick pocket there. Ther Rome station seemed cleaner and new to us and we had no problem at all there. I was only concerned about all the post regaridng Naples and the issues there.

You will find pickpockets at most large European stations, many of which are a bit grubby and run-down. That's entirely normal.
Disoriented and tired travellers make good targets for pickpockets and petty thieves. Distribute valuables safely around your person (I use a money-belt when travelling), don't flash cash or valuables, wear bag straps across your body, keep your eyes open but don't make eye contact with beggars/touts. You will be absolutely fine.

Also beware of 'helpful' strangers, or any kind of question.
At Napoli Centrale we were asked by some guy, looking American, if we could change some money. He looked very angry when turned down. Why would he ask tourists instead of going to the bank office close by? This being too close to the police post at the station ?
