Belize Birding and Diving/snorkeling

We will be in the placencia and caye caulker areas the end of January and are looking for help on birding tours and snorkeling and diving trips. Is one area better than the other for those activities? Any suggestions of tour companies? It will be our first trip to Belize, and want to see as much as possible. Looking for restaurant recommendations, and any thing else you can think of to share.

Kind of a long trip but go out to Half Moon Cay and see the Booby Rookery-
Usually it's part of a Blue hole snorkling trip.I've used Amigos del Mar but they are on Ambergris.Someone on Caulker must do the trip though- Well worth the Long boat ride.
Only red footed booby colony for thousands of miles apparently-C
