I'm going to be in the Nimes/ Uzes area 22-29 December. Please can anyone suggest some nice things to do? I will be visiting a friend, we are both thirty something, mobile, with a broad range of interests, cultural and sporty.
Additionally, any wine festivals? markets? Good, fun, cheap places to eat?
And can anyone recommend somewhere to go riding? Camargue based maybe???

There are a host of locations where you can go riding. On the road to L'Espiguette near Le Grau du Roi there are stable after stable with numerous riding options (about 30 minutes from Nimes).

It will be too late in the year for wine festivals but you could tour Listel near Aigues Mortes (see the Aigues Mortes website above).

Allow yourself a 'Roman' day to explore all the Roman sites within nimes (including a very impressive amphitheatre, now used for bullfights). The tourist information site is full of useful info/contacts etc about both Nimes and the surrounding area:

You could also visit to Avignon, which is a lovely town to explore (and has the famous bridge, of course) with lots of independent and interesting shops.
