No you don't have to book them in advance, no need to book any trip in advance, as long as you have a few days to do them. Also it is much better to wait until you are here as then you can see what the weather is like and do the different day tours on the says the weather is in favour of each trip....having said that, sometimes the weather just doesn't care to make the visitor happy...only if we could know what the weather is going to be:)
The outer reef can be done through a number of companies.
The Mossman Gorge/ Daintree/Cape Tribulation is a good one to do by yourself, if you are willing to drive, hire a car and do the daytrip from Cairns to Cape Trib.
The Kuranda Train trip up the range and the Skyrail down the range is a good one to do as well. You can catch the train ( always do the train UP and Skyrail down) in the centre of Cairns at the Railway station and then after coming down the range on the skyrail, you can catch a bus back to the train station. It is all very well organised.
