Gilda is right that you can see train schedules and buy tickets at the official rail website - note that you can go to the English pages directly at www.trenitalia.com/en/index.html . And, yes, while there are a few direct trains, many (most) change in Verona - no big deal.
However, also note that many VTers report that they can't use non-Italian credit cards at the Trenitalia website, i.e., they won't be approved, even with the assistance of Visa or MasterCard personnel. This is not a huge problem, though, since most people would simply arrive in Bolzano (how are you getting there? by train?) and buy tickets for the next train.
Some trains are reservation-only (like the EuroCity (EC)), and some do not take reservations at all (regional (R)). The EC and similar trains may sell out, but this is not likely, and unless you are traveling at some peak holiday period, you would just take the next train. And if the next train is a regional train, with a ticket you can get on so long as there is standing room...this doesn't happen often, but the point is that it would be really difficult to get "stuck" in Bolzano that day if your travel plans are flexible.
Anyway, play around with the trenitalia website and see if the solutions make sense to you...
