I am from Mauritius and am a primary school teacher. I'll try to answer your questions.
1. We want to get out and about in evening, are there any local restaurants/bars/shops in Trou d'Eau Douce?
Trou d'Eau Douce is a tourist village. There are almost all the facilities there including lots of restaurants etc.
If not where would the nearest place be?
But u may also want to go elsewhere everywhere is near with a half an hour routes.
2. Recommendations on excellent local restaurants across the island? 3. Recommendations on a swanky restaurant for a special occassion?

4. I have read of a lion & cheeta sanctuary in Port Louis where you can walk with the lions, does anyone know anything about this?
This is not in Port Louis but at Casela on the other side of the island. Trou d'eau Douce is in the East and casela in the west of the island. About 1 hour drive. They are baby cheeta and baby lion. Casela is a bird zoo. There are lots of birds and it's really grandiose.
5. How easy is it to reach other resorts by taxi - ie Grand Baie?
by taxi it's about 1 hour off peak hour. That's in the North of the island.
6. Does anyone have a reputable and reasonable taxi driver contact? Also anyone who would do island tours?
U may contact my friend and he may advise. He does island tours.
7. Any boat charter companies?
Again he has the contacts. U may go sight seeing watch dolphin and even big game fishing... or simply fishing. There are all these in Mauritius.
