I was travelling by bus from Martinborough to Featherston this morning - and on that short journey I saw 3 hawks. I am wondering what type they are likely to be - or if perhaps they could be of several different types.

Although I am no raptor specialist ;-)... there is not much choice. The hawks we normally see in NZ (and I also saw some of them in the Wairarapa the other day) is the Australasian Harrier (Kahu; Circus approximans). The second NZ raptor is the NZ Falcon but that is clearly smaller and has different plumage and beak.
