Alan is correct but there is still a way to visit Mostar on a day trip, if you don'tm ind paying some extra money (btw it's worth it).
1. At the Dubrovnik bus station, find out the name of the Croatian bus station nearest to the BIH border and have them tell you at what time is their last bus. I don't rmember what the station was called - but the bus was at 5-something PM last time I was there.
2. Catch the regular bus to Mostar and once in the old town, past the bridge on the right, you'll find a travel agency. Have them book a taxi for you to the Croatian station. I think we paid 35 euros. Allow for some extra time in case there's traffic at the border.
3. From the Croatian station, take the bus into Dubrovnik. It should arrive into town at about 8 PM. So Mostar in one day is quite possible. You don't need a guided tour.
Montenegro: I think that there are a few buses a day, so you shouldn't have trouble making your way there. Kotor is about 2 hours and a half from Dubrovnik, Budva about 3 hours.
