I don't know what your budget is, but West End will be quite expensive, as would most places in close vicinity to the city.
Ignoring price considerations, West End holds the following benefits: lots of shops along Boundary Street (West End) and Little Stanley Street (South Bank), Coles at West End Markets, plenty of exercise opportunity along Riverside Drive and South Bank Parklands (jogging, cycling), volleybal and jogging at West End Park, train stations at South Brisbane and South Bank, Cultural Centre Busway, City Cats on the river, and nearby parks (Orleigh Park, South Bank, Roma Street).
Another area close to the city that may appeal to you would be New Farm Park.
You have lots of shops and night life along Brunswick Street towards Fortitude Valley, China Town in neighbouring suburb Fortitude valley, exercise opportunity (at New Farm Park, Merthyr Park and Newstead Park), City Cat transport, Brunswick Street train station.
In terms of horse riding, you've got the Riverside Equestrian Centre at 3666 Moggill Rd, Moggill, Windsong Equestrian Centre at 120 Eprapah Rd, Mount Cotton, Welcome Horse Riding at 136 Foggs Rd, Mt Samson, and Wattle Creek Riding School at 28 Kays Rd, The Gap.
