Hi Ron, I have done a very similar journey myself. Viamichelin is best site to search the route. The actual link is:
http://www.viamichelin.com/viamichelin/gbr/dyn/controller/Itineraires?strStartCityCountry=EUR&strStartAddress=&strStartMerged=valencia&strDestCityCountry=EUR&strDestAddress=&strDestMerged=granada&choiceType=5&ie=UTF-8&x=36&y=2

Should have stated that was the shortest route. You can of course change it to fastest if you wish.

i cant tell much about how to spend your time in granada as ive only been there once. but im from valencia, so i'll try to give you some ideas. 7 days arent too much, you'll spend most of your time seing both cities (monuments, etc) so you wont be using the car too much. if you have a car, however, that'll make it easier to visit the Albufera. la albufera is a lake outside the city thats in the middle of a natural park with a typical kind of ecosystem called 'marjal' (marsh in english). that'd take you half a day. you could drive from there to Cullera, thats a summer resort kind of place, so it's crowded with tourists but it does have very nice beaches and coves.
if you're into rafting, canyoning and all that there's a place in Requena where they organise things like that http://www.errequerre.com/ (the page is in spanish but if you're interested i can give you a hand). that'd take you a whole day, or even a weekend if you up to it. driving to Requena from Valencia would take you aprox 30 mins through the highway.
hmm, there're a lot of day-trips you could do if you have a car actually. like there are some castles in some towns outside the city and that. Though i think you wont have time. a couple of weeks ago i did a day trip to a small island near Alicante called Tabarca (the ferry leaves from a town called Santa Pola, takes aprox 30 mins). the island is nice and quiet, with nice beaches. that could be a nice thing to do too while you're driving downwards to Granada. or you could visit the 'nacimiento del rio Mundo' (thats where a river called Mundo starts). thats near Albacete, that's also on your way down to Granada. ive been there once, and that was like 5 years ago. then it was nice but ive heard it's changed a bit in the last couple of years and now it's not so 'wild' anymore. i cant tell...
as for what to see in valencia, meaning the city, have a look at this page http://www.valenciavalencia.com/ it has a lot of good info.
hope this helps a bit

Hi Jezzabel,
Thanks for your tip, the 7 day period does not include Valencia beacause I arrive there on tuesday Already ... I have 3 days to explore Valencia before I rent a car.
I probably want to drive allong the coast to the south... and maybe that Island is a good option to visit...
I am wondering if it will be easy to find places for the night when I dont book them in advandce... I am looking foor nice spots at the coast to spend one or 2 days and move on further then.
greets Ron

i dont think it'll be easy, it's peak season and the coast is always packed with tourists. most hostels will be full and maybe hotels too. though if you're travelling alone then you only need one bed and maybe you're lucky. i'd check a couple of places before you go, and would check availability beforehand. you dont have to stay there, nor to book yet, just make sure there's room. maybe that will give you an idea on what places to stop at and stay over night as they'd have rooms available. just a suggestion.
if you're thinking on driving along the coast then maybe Calpe would be nice too. again, it's full with tourists, most of them from abroad, but the beaches there are nice. and if you're into diving they have diving facilities and sometimes they organise boats to smth called Peñón d'Ifac, that's basically a huge piece of rock out to sea that's a natural reseve.
Javea is another place with great beaches, my brother was there 2 weeks ago and they rented Jet skis, which should be fun too. I suppose you can rent them in other beaches too, like Calpe maybe, but I don't know for sure.
The thing is that once you've seen a nice beach, you've seen them all, so Javea, Calpe, Altea...won't make a difference.
Near Benidorm there's a theme park called Terra Mitica, which might be fun. http://www.terramiticapark.com/es/index.htm?ES
and thats all i'm coming up with for now.
hope you'll have fun :)
