Does anyone know what this town is like? Thinking of staying there for one night to break up journey driving from Alsace (near Colmar) to Paris.

Avoid !!!

My parents live 45 minutes drive from there, so I've been there a few times on the road to summer holidays.

Vitry le François is a small city with nearly nothing to or to see.

What I would suggest you is to prefer Reims (nicer city, with cellars to visit, Pommery or Veuve Cliquot), or the area of Epernay.

Epernay is truly THE city of Champagne, so as you'll be there you could visit a Champagne cellar. Moet & Chandon is very nice to visit. De Castellane is nice too.

If you want, you can also sleep in a typical inn in the heart of the vineyard, between Epernay and Reims (Cumières, Hautvillers...) or Epernay and Chalons en Champagne (Verzenay, Verzy, etc...).

The city center of Chalons is quite nice, but small and not so animated as Reims or Epernay.

From Epernay to Paris you'll need about 2 hours drive, and from Reims only 1 hour 1/2, as it is direct by highway (I must say turnpike, as it is 9,2€ from Reims to Paris).
