Is there a metro that connects the center of the city to the Schipol airport? Also I would like to find a hostel close to the metro and perhaps some ideas of a short sight seeing tour for sunday morning.

yes, take the train! after you come up the escalator in Schipol, make a 180 turn and go to the window to buy a ticket to Centraal. I was just there 6 weeks ago. It costs 2.6 Euro, which is about 4USD. Takes less than 20 minutes. No reservations, no first or second class. European governments want people to take the train so badly that the conductors rarely even ask you for your ticket (but buy one anyway!). I saw plenty of hostels in Centraal (downtown area), but I would indeed make reservations for sleeping arrangements.

There's a train running to Schiphol (20 minutes travelling time).
Normally the trains to Schiphol are very well displayed at the Central Train station to accommodate the many tourists travelling to the Airport.

The closest hostel to the Central Station is the Flying Pig at the Nieuwendijk street.

Early Sunday morning Amsterdam is pretty "dead". You might opt for any canal boat tour in service or just stroll along the canals.
