It can be done! -at least you can find a house away from the over developed southern coast
We rented a lovely apartment in the foothills of Mount Teide (a must see - not just the volcanic peak but all the amazing countryside around)..

Other famous sights - but they do tend to attract a lot of visitors - are Los Gigantes, Garachico, Masca, - if you like twisty mountain roads. Orotava and La Laguna.
In the north in particular look out for the typical Canarian architecture with lovely wooden balconies.
Tenerife is famous for its flowers, many growing wild in the hillsides, but there are many lovely parks in the island. Santa Cruz de Tenerife is an elegant old town with some remarkable new architecture, including the new Opera House and Concert Hall.
