It all depends whereabouts you are, and what shop/cafe you are in.
Maybe 1.50 to 2GBP for a coffee. Maybe 5 - 7GBP for a t-shirt (though you may find them cheaper, and/or more expensive), maybe 2.50 to 25GBP for earrings (depends on where, and what they are made from). Cans cost maybe 50 pence in a supermarket but up to 1GBP in a touristy-area shop. Everything will be more expensive in tourist-popular areas, from bottled water to sandwiches to souvenirs. Scotland, like the rest of the UK, is not cheap (and prices are rising all the time).

Hi, I've been on one of these South Africa/UK exchange education exchange visits and helped host the return visit. I know how awkward it can be planning for spending when you are a guest. Leics knows her stuff about the UK prices but may I add a suggestion that you allow a budget for day to day expenses and another one for souvenirs? When you say all expenses paid, does it include all meals? This can make a serious dent in your costs. And drinks? My South African friends could have blown their entire spending money on one night in a bar. Maybe you could ask your hosts what their plans are so you can plan ahead, and hurry up Scotland schools break up for summer imminently. Hope you enjoy your trip to the UK.
I do remember visitors wanting sports shirts of rugby, cricket, football teams. You can expect to pay £40 to £50 for one of these shirts.
