I'm wondering: how would we get to San Gimignano by public transport from Lucca - and about how long would it take?

You can take the train to Poggibonsi-S. Gimignano:
http://www.trenitalia.com/en/index.html will give you times and fares in English. Journey takes around 2 hours, with one or two changes. Ordingary one-way fare 8.60 euros. From Poggibonsi you need a bus to S. Gim (takes about 20 minutes). Timetable here: http://www.sangimignano.net/bus/

Poggibonsi-S.Gimignano is not S.Gimignano's station (where there is no railways station and it's on top of a hill).
it's about 15 km far away, sure you could take a taxi and/or a bus, anyway [by public transport] it seems you have to go to Poggibonsi first. Anyway *as a rule* if you had to take "not direct" public transport in Italy, you could waste your time waiting.... If I were you I would hire a car, from Lucca at early morning I'd go to S.Miniato (far 42km from Lucca) and then, about 35km, S.Giminiano. beatiful landscape. if you will, from S.Giminiano you could go to Poggibonsi->Siena (46km) for the evening,maybe having dinner there, Siena is very beatiful at sunset/evening. From Siena you'd better take the motorway to go back, with dark there is not much to see and in the evening and faster (not always during the day *in summer*) p.s. I wrote that itinerary because I did it :-)
