Hiya La, It does'nt matter which day but book the ferry tour ticket,it takes about 2hours and the commentary is a chance to learn a little of the river history.
The river-front at the Pierhead is not very good at present due to massive building projects---but still go and enjoy my home town and it's people. Take in the Albert dock, Matthew St, some of the old pubs around Matthew St--- you will be back--Taraa!

Either really is ok, on Friday you may catch the commutters but its never too busy.
If you come on the bank holiday weekend its the Mathew Street Festival so there will be loads going on and loads of free entertainment. However you will need to book accomodation soon as it will be very busy. For all your sights it may be worth investing in this: http://www.yourticketforliverpool.com/site/home
