Hey there - I went to Santorini last summer, also in July, and it was pretty packed. There are a ton of people walking around all day and night, especially in the more popular parts of the island. We decided to book a room ahead of time, and to be honest it seemed like there were definitely rooms available even with all the people on the island.

I remember specifically that each time we got off a ferry for a different island, there were various people waiting for the passengers, offering them rooms, cars, etc. during their stay.

While I felt more comfortable having booked a room ahead of time, I wouldn't say it's absolutely necessary, but here is the agency we booked through last year - I know you have already booked your trip, but their service is excellent and I'm sure they will be able to answer any questions you have regarding the need to book hotels ahead of time. Have a great time.

Merhaba, Bahadir-

It is always possible to find a room. If you arrive by ferry there will be people who meet the boats to offer you rooms, and at the ferry port there are two offices where you can go to ask for a room and they will find one for you, but there is no guarantee that the rooms will be good. The problem is that the room might not be somewhere you would prefer. If you know your arrival date and if you have chosen a village for your holiday then I suggest that you book online so you will not waste time looking. Look at this map:

The best beaches are Kamari and Perissa. If you prefer to stay in a village overlooking the famous caldera look in Fira, Firostefani, Imerovigli and Oia. I suggest that you don't stay in Fira, it is very crowded and noisy with traffic in July. A quiet village is Imerovigli. Inexpensive hotels are in Karterados. Check Villa Manos and Villa Pelekanos. In Oia check the Anemomilos Hotel and Musses Studios/Casa Francesca. In Firostefani check Villa Fotini, Villa Ilias and Blue Dolphins Apartments. Many hotels will already be full for July. I hope you find something you like and a good price.

It seems that you already know the way. If you consider finding accommodation as part of your vacation adventure, go on. If you do not need a many stars hotel, be sure that you will not sleep under the the sky stars. Booking in advance will save time for you, but there is always some risc to book in a place you know only through some descriptions and photos.
