You can rent a boat (and skipper) and go out to the old prison island just off Stone Town. The snorkelling is good around there, but the best bit for me are the giant tortoises that are kept in the grounds of the old prison building. Some are absolutely massive and I was told weigh about 300kgs. Certainly worth a visit if you are there for a few weeks.
Also, go to a spice farm. You can get shown around a farm which may take an hour of so, and see and smell, and buy loads of different spices that are grown there. I didn't think it sounded like something I'd normally do, but it was extremely interesting.

Have a brilliant time, it is stunning there.
