I will be traveling thru Bilbao next month but will only have 1 day and night in the city. Could anyone make a recommendation on what I "need to see and do" while in the city. It will be my first visit to the city. Dining suggestions would be greatly appreciated!

Agree, the mammoth museum itself can take you the whole day, a walk along the river side is also pleasant.

You could have a look at the tourism section in bilbao.net:
http://www.bilbao.net/nuevobilbao/jsp/bilbao/resid There is also a good pack of tips in the VT pages. If you only have a day, I would use it to visit the city (old part, shops at Gran Via...) rather than a museum (unless it rains heavily).
