I will be spending 3 days in Rothenburg in December. I would like to visit Dachau one of those days. Is there an easy way to travel between the 2 places? I can only take the bus or train.

You can get there by train which will take you about 3 hours. If you want to visit the concentration camp you can take a bus from Dachau railway station to the camp.
When checking connections on www.bahn.de take care you take a train connection with as little changes as possible. The more often you have to change the train the higher the risk of missing one, and those regional trains do not wait. There is one connection with only two changes on regional trains. This has the advantage that it is also cheaper, and you can take the Bayern Ticket.

A long trip. Rothenburg is connected to the train station at Steinach by a shuttle. From Steinach to say Nuremberg will usually be two more trains with a change at Ansbach. There are occasional direct trains along the same route but without a transfer. From Nuremberg, it is probably quicker to take the ICE express direct to Munich and then the local train out to Dachau rather than take a slower train from Nuremberg. Long trip.

I think a bit more than three hours is not a long trip for that distance - only if you miss a connection. And BTW Trains start at Rothenburg's railway station. The "shuttle" to Steinach is a regional train. Of course, there are also buses running but you can use trains, and here is an example for a (slow) connection with only two changes:
