Hi Everyone - I'm trying to book a one way flight from Havana to London but every airline online is not allowing it. Is this the norm?

Don't see the problem. Iberia for instance allows it. 660 euros one way all taxes inluded, for August.
So: try Iberia Air Europa Martinair Virgin Air France etc. And/or try for instance www.cheaptickets.com or other sites like that. Mind that a single is normally more expensive than a PEX-return fare. So consider buying a cheap return fare and "forget" the return portion.

Check out with the airlines and the Cuban embassy because it's my understanding that you can't book a one-way flight unless you're a resident or a citizen of Cuba.

I don't think they will give you a visitor's card (visa) if you don't have a full return flight booking (you have to send them a copy)
