Not sure about Anjuna, but as an example in Calangute and Baga in total there are three restaurants open ie Infantaria, Britto's, and 24 hour pub/foodhall...so not much!

In Anjuna, Curlies (south anjuna beach) is open as is Blue Tao. Restaurant at Laguna Anjuna also open. All restaurants catering to locals are open, as they are everywhere in Goa. Contrary to BluBluBlu info there are many restaurants open in Baga and Calangute - Plantain Leaf, Midaas Touch, Carvala, Ronil. In Mapusa, Navtara. In short, you will not go hungry.
