I think that's the normal practice, i.e. to buy the ticket on the day of departure or prior to boarding the ferry. There are ferry trips every 30 minutes.

Just turn up when you're ready and they'll be a ferry within 30 minutes, no problem.

I was there about a month ago. I bought my ticket the day of my departure. Ferries are about every 30 mins. Lucky for me I was traveling alone and I got a seat on the next ferry departing. The couple behind me had to wait for the next one.

There are ferries every 30 minutes or so but during the peak season you may have to secure your ticket online if you have a particular time in mind. If not, there shouldn't be any problem for you. You'll just have to wait.
If you want to book online, the websites can be found at http://www.hkkf.com.hk/en/ferry/index.html and http://www.turbojet.com.hk/eng/home/index.html. These are the same ferries that go to Macau by the way. Have a safe trip.

you will not run out of tickets on the ferry to Macau... their departures are like every 30 minutes... if you are in Tsim Sha Tsui or in the Kowloon peninsula, you can take the ferry from the terminal near the Marco Polo properties in Canton Road... or you can go to Sheung Wan in Hongkong island... the Turbojet ticket counters are at the Shun Tak Centre... from the counters, it's just a breeze and you're on board a ferry for Macau... don't forget your passport as you have to go through immigration upon departure from Hongkong and upon arrival in Macau...
