Wanuskewin Heritage Park would make for an interesting afternoon. It is only a few miles outside of the city. Here's the link:

Buffalo Pound Prov Park is 40 km east of Moose Jaw; there are lots of other parks that are closer to Saskatoon than that; Pike Lake and Blackstrap are quite close to Saskatoon, The Battlefords is north of North Battleford and would have plenty of activities to keep you occupied for a day. Fort Carlton Prov Park is about an hour's drive from Saskatoon and is a restored trading fort. Here's a link to all of the province's provincial parks:

And for the days when you don't feel like driving outside the city, Meewasin Valley Trail is right in the city of Saskatoon and offers about 20 km of trails along the riverbanks.

As far as a car hire company, Enterprise is always my rental company of choice. They will pick you up, plus they usually offer free mileage on rentals if you are not leaving the province.
