Lake Atitlan is a great choice to spend a couple of days after visiting Antigua Guatemala. I did pretty much the same itinerary, staying in Panajachel instead of Santiago Atitlan.
Have a lake tour and visit the other villages around the lake. That will take at least one full-day. Panajachel is worth a visit as well as San Pedro Laguna, and the smallest villages of San Antonio Palopo and Santa Caterina Palopo. Anyway, wherever you go don't expect too much in term of sights and attractions, it's just about enjoying the natural beauty of the lake and exploring the local culture and way of life and the people.
The restaurants scene at Lake Atitlan is limited and quite plain and it's unlikely you will be impressed by any of the choices available in Santiago Atitlan as well as in any other villages around the lake. My recommendation is just step into the ones that appeal you the most.
