Would someone know if you can interrupt your trip down the Rhine river with KD Line and go ashore in e.g St Goar and enjoy a cup of coffee and kuchen and then continue on an hour later on the next boat?

Yes, you can - and as often as you want.
However, do not forget to contact the service person aboard first so he testifies that you interrupted your trip in St. Goar.
