Arriving by Eurostar in Paris from St. Pancreas. Where and which train in Paris to Paris Disneyland?

Take the RER A towards Marne-la-Vallée (check on the platform the final destination as there are two branches on the East side of RER A) and get off at the last stop, 'Marne-la-Vallée / Chessy'. RER A trains run daily and frequently. Note that the last train from Marne-la-Vallée to Paris leaves 21 minutes after midnight.
