Will you go from Hamburg to Copenhagen via south Denmark or go to Puttgarden and sail with the ferry?
If you go via south Denmark you could stop to see the City Odense, where the writer Hans Christian Andersen was born If you go via Puttgarden, you should see the "Hansestadt" Lubeck. there is several other spots to recommend but i dont know how much time you would like to spend.
