For organized tours you could check this (expensive) site, that has parts of your wishes: http://www.hollandtoursschiphol.nl/
There is a bus going from Amsterdam to Marken, some more info here: http://members.virtualtourist.com/m/6117e/70228/ Many things you could plan by public transport, see this site for all public transport in the Netherlands: http://www.9292ov.nl/ and http://members.virtualtourist.com/m/tp/1aa687/. Trains: http://www.ns.nl/ (in English) Cheers Dennis

For the cheapest and easiest option (in my opinion) I would suggest for Alkmaar to take a train from Amsterdam to Alkmaar (see transportation advice from the previous replies).
Then go to the Tourist Office (and then you'll already have done a bit of sightseeing, if you've walked the 10-15 minutes from station to center of Alkmaar), and get your information there. The website is www.vvvalkmaar.nl Alkmaar is small, you don't need any additional transportation. You can do a little canal tour and if possible, do visit on a Friday morning (early!) to see the famous cheese market. And yes, Alkmaar is a day trip, even though you could spend a bit more time there if you wished.

Alkmaar again:
A train return trip is € 12,10. At the tourist office in Alkmaar, a city map is free. The cheese market on Fridays is free. A canal tour is (if I remember correctly) about 7 euro. You can eat lunch for an average of 10-15 euro per person including a drink and a coffee. The Cheese museum is € 3. So all in all, a DIY day tour sets you back about € 35 per person.

Zaanse schans is also free to visit, you take the train from Amsterdam Central station in the direction of Alkmaar ( if you visit Alkmaar the same day, you just buy 1 return-ticket = retour) and go of the train at station Koog Zaandijk.
Since they fix the bridge over the river de Zaan, they now have a ferry, so you also have a boattrip !!! You can walk from the station to the ferry and from the ferry to the Zaanse schans.Back on the station, you just take the train to Alkmaar. Go on friday,to visit the famous cheesemarket. There is also a museum on beer.Have fun, maria
