We will be in Dubrovnik for a day late in May. Instead of tours arranged by cruise ships, I prefer to find a driver and van to show us the city and surrounding area. Do such services exist?

Check www.dubrovnikriver.hr, they offer that kind of service. Or contact dubrovnik city board and they might be able to give you contacts of more agencies doing the same thing, their web site is www2.tzdubrovnik.hr/english/index.php

You can try with a local car rental service:A Marker Car Rental-they offer a chofeur drive and good service.
