I will be arriving in Manila on Sunday around 18.30 PM and will take a taxi to my hotel. I will need some pesos to pay fot the ride. Should I try to exchange money in my country beforehand or will I be able to exchange money at the airport? Is money exchange counter at airport over 24 hours a day? Thanks for your insight in advance!

Foreign Exchange counter not 24 hours, but there is an ATM at the airport. But it dispenses big notes, so watch out, because the taxi driver will try to swindle you - I doubt the taxi fare is more than about 100PHP.

The F/X counter isn`t as John says open 24hrs but i`m pretty sure that it will still be open around 7pm.
The ATM will dispense normally 500 or 1000 php notes & John`s right the taxi drivers will try & swindle in some way if you have large notes usually with the "I have no change line". If you only have large notes & need transportation & are concerned you can book like a hire car. These people will find & hassle you as you are leaving the terminal.More expensive than a normal taxi but i think a better way to get to your hotel or wherever.

yes exchange some, about P1,000 just to make sure you get to your hotel and some food. upon arrival get the metered taxi (yellow toyota vios car available only in terminal 2 phils airlines)
then exchange the rest in money changers located in malls, its cheaper.

Banco De Oro is open until 9pm (sun to fri); 1am (saturday).
you should be able to change money with them.

Usually when you change money over in a different country you get a lower rate.
I arrive at the airport around 10 or 11 PM with NWA often, I have always found at least one money changer open at that time. I would be very surprised if there is no one available to change money around 6 PM. Leaving in the morning at around 0500 I haven't found any money changers to convert my left over pisos to dollars. I did get one of the guys that collects the departure tax to change some remaining pisos over to dollars. Since I return to the Philippines pretty often most of the time I just keep the leftover pisos for next time. Good luck.
