which airlines offer a direct flight from Amsterdam to Copenhagen? I am not interested in laying over

To answer you own question, go to www.farecast.com, enter 3 letter airport code (or city) for 'from' and 'to', and you will be shown every (possible) flight between those two destinations, along with cost and duration of time.

transavia will stop flying to copenhagen within the next few weeks, so they are not an option in the future anymore.
sterling will probaply be your cheapest bet, but KLM and SAS do have good offers from time to time too.
